The Place: I already wrote about Guzzle (and their conjoined sister Sip) last week when I praised one of their unique cocktails. This highly regarded cocktail bar duo is very difficult to get into without advanced planning. So when I did strike jackpot and got a table, I ordered as much as I could within my means.
In addition to the Sun Dried Daisy Cocktail, I had a few bites from their food menu and one thing took my breath away.

The Dish: Due to the dark lighting, a dying cellphone, and the quick way the Pork Yaki was served, I was not able to get a good photo. Apologies for the above dark and blurry enigma. Even though I don’t have an acceptable photo, I still had to document this incredible little bite. Truly one of the best I’ve had all year. You can get a better sense of this dish on the bar’s Instagram feed here.
Someone from the kitchen (the chef himself?) walked this skewer to my table and handed it to me. It all happened so fast that it was difficult to take it all in. The skewer was shockingly wrapped around a blanket of cotton candy (koji flavored) that started to dissolve into the meat itself. Let’s talk about that.
They call this 30-layered pork because much like a stacked gyro or shawarma, this is comprised of multiple pork shoulder slices, seasoned with coffee and sugar, smoked, and composed onto a single stick. It’s a pretty brilliant little bite that walks the line between street food and fine dining. I can’t recommend it enough – even though my photo doesn’t do it nearly enough justice. Price: $12
