It’s pretty ballsy to take the classic Italian combo sandwich and eliminate the meat. Orchard Grocer does it to satisfying effect with fake mortadella, but the version at sandwich champs Court Street Grocers is even more impressive. Here they use thinly sliced roasted butternut squash in place of meat, but then top it with all the usual flavors: arugula, red onion, mayo, a special hoagie blend and a trio of cheeses: mozzarella, pecorino, and Swiss. It’s tangy, sweet, salty, fresh, and as satisfying as your usual Italian combo. Price: $12.17
