BRIAN’S 100 BEST ’19: RUSK at UNCLE TETSU JAPANESE CHEESECAKE

I’m counting down the 100 best dishes I tasted in 2019…

I thought rusk was something created by this Japanese bakery, but after some research it turns out it is a thing that I somehow missed my whole life until this year. Uncle Tetsu, which is a cheesecake phenomenon in Japan, bakes full sized cakes or these sweet little crunchy snacks. They slice up the cheesecake, add a bit more sugar, and bake again until they become biscuit like. Each crisp bite softens and crumbles as you eat it and the tangy sweet cheesecake flavors come to life. Rusk, where have you been my whole life??? Price: $4.50 (per bag)
