100 BEST ’18: CALAMARI SANDWICH at LLAMITA

I’m counting down the 100 best dishes I tasted in 2018…

I’ve had a calamari sandwich once before but it was nothing like this. My previous experience was in Madrid and it was basically fried calamari on a roll. It was great, but the spicy messy version served at hip Peruvian sandwich joint Llamita is something else entirely. Crisp grilled tentacles are marinated with a spicy aji panca marinade and stacked on a toasted bun with charred scallions and some slightly cooling aji amarillo mayo. Let’s hope calamari sandwiches finally become a thing. Price: $15
