I’ve tasted lots of burgers with lots of toppings, but if memory serves me correctly, Hart’s in Brooklyn was the first place I experienced a burger with marinated anchovies on top. Why are more chefs not doing this? Certainly taking some nods from Spain and the Mediterranean, this expertly blended lamb burger has the right amount of gaminess that is heightened by the briny filet of anchovies. This puppy needs something stronger than cheese for balance and so vinegary crisp celery proves the perfect accompaniment. Price: $21
