DISH OF THE WEEK in New York: Tuna Mayo Gimbap at TBD GIMBAP

The Place: I have such a strong connection to this particular storefront. It used to be my regular haunt for some amazing goat’s milk soft serve (way before the kids waiting in line for fro yo today called themselves New Yorkers). Then it transformed to a cool soup take out, then a charming Japanese gluten free bakery. And now the owners of the neighboring Nami Nori have transformed the previous Postcard to a temporary pop-up hawking Korean sushi rolls known as gimbap.

The set-up is pretty much the same as before, but instead of fruit sandwiches in the display, we know have a choice of stuffed savory rice rolls.

The Dish: I’ve never been overly taken by gimbap, which I often have from an Asian grocery store and it is a light quick way to fill up and get some veggies in my diet.

However, the loaded Tuna Mayo Gimbap here were the best and freshest gimbap I’ve ever tasted. Flavors and textures varied as I bit into chunky tuna bits kissed with mayo, crisp burdock roots and carrots, soft bits of egg, tangy pickled daikon, and potent peppery perilla leaves. The rice was warm and studded with sesame seeds. I was truly amazed at how filling and notable this plate of gimbap was. If TBD’s mission is to show NYC how good these can and should be, then they have succeeded. I’m just bummed to hear it’s a temporary pop-up at this location. So I’ll just have to wait to see what this location transforms into next. Price: $12
