Belacan is a fermented shrimp paste used in much Southeast Asian cooking. The stinky stuff found its way onto the chicken wings served at Malaysian coffee shop Kopitiam. It offers the wings an even greater caramelized skin while keeping the flavor subtle and pleasant. These wings are terribly addicting and with a sweet dipping sauce and fresh herbs, you get all the flavors of Southeast Asian cooking in the modest little bar snack. Price: $7
