DISH OF THE WEEK: Tocino at GRILL 21

I’m counting down the 100 best dishes I tasted in 2016…

There’s a lot to discover about Filipino food. It’s lesser known in this country and it is great. First thing you need to know is that Filipino cuisine has their own bacon. You like this already, don’t you? It’s not smoked like its Western counterpart, but tocino is cured pork with wine, sugar, and salt before it is roasted. The crispy sweet version at Grill 21 is a true revelation. You can get it as part of a platter or with eggs, but you may as well just order it all by itself. Price: $14
