Chicken Under a Brick at MARC FORGIONEPeople don’t often realize how delicious chicken can actually be. Marc Forgione has mastered the art of revealing every ounce of flavor from the poultry. Half a chicken is pan-roasted under a brick and ensures the bird has the crispiest skin possible and the butter, lemon, and salt complement the flavor of the meat and allows the soft flesh to fall right off the bone. It’s accompanied with potatoes, broccoli rabe, and rich, homey pan drippings. You’ll forget Thanksgiving ever existed. Price: $31/$62 (for two)
